Look into the scheduling of www.bahn.de - all trains with compulsory reservations are marked with an R in a box.
Only very, very few trains in Germany have compulsory reservations. But on all your trips, if they take place during a busy day of the week (friday afternoon, sunday afternoon, monday morning) I would always recommend to reserve, at least in the 2nd class.

The only trains that require reservations are those named ICE Sprinter (not to be confused with normal ICE%26#39;s) - this applies to exactly five among the thousands of trains that travel over Germany every day. These can easily be avoided.
On all other trains you have the choice whether you want a reservation or not. However, on long distances trips like these, even more so on the Berlin routes which are always busy, I%26#39;d recommend seat reservations.
